How to use:

Make Masala: Roast and grind coriander, fennel, cumin, pepper, dried chilies, cloves, cardamom, and cinnamon.
Cook Onions & Spices: Sauté onions, ginger-garlic paste, and green chilies. Add pureed tomatoes, turmeric, red chili powder, and salt. Cook until the oil separates.
Add Masala: Stir in the ground Chettinad masala powder and cook for 2-3 minutes.
Cook Chicken: Add chicken pieces and cook for 5-7 minutes. Add water, cover, and simmer for 20-25 minutes (or 10-12 minutes in a pressure cooker).
Finish: Add garam masala, cook for 2-3 minutes, and garnish with coriander leaves
